Stuffed Peppers Galore

It was a lazy weekend for me. Rain in San Diego meant all I wanted to do was relax and enjoy it!  Sunday afternoon rolled around and I wanted to cook and plan some meals for the week but didn’t want to spend a ton of time in the kitchen. Stuffed peppers it was!

I have a tough time writing recipes because its not really in my nature to follow one. So I always include links to others to help you a long until I get better at writing everything down!  I end up looking at a few recipes and then just “winging” it. I hollowed out the peppers and combined chopped veggies, cooked rice and bison into mixing bowl. Mixed well and evenly distributed into all peppers. Cook for 30 minutes on 350° F  Check to see if meat is cooked all the way through! Top with sauce and enjoy!!

For this recipe I used:

  • 10 bell peppers
  • (grass-fed) bison
  • white rice
  • kale
  • mushrooms

Homemade Sauce- (not pictured)

  • 2 cans of diced tomatoes
  • 1 garlic head
  • 1 yellow onion
  • 2 handfuls of fresh basil

Sauté onions and garlic on low heat. Empty tomatoes into sauce pan and add onions and garlic. Simmer for 20 minutes. Add fresh basil, s & p to taste. Voila. You’ve got yourself some delicious sauce!!
