Sweet Potato Curry Soup

I am a big fan of meals with as few ingredients as possible. I am also a big fan of my crockpot. Seriously- It is the greatest way to make a couple of meals at once and not even think about it!!

I started my soup with the Mirepoix mix from Trader Joes. Big tub of chopped onions, celery and carrots and bam! Soup is started. I also added some homemade chicken broth (but you can use any stock you want) and coconut milk. I chopped up 4 large sweet potatoes and tossed them in as well. I peeled them but you can leave the skins on as well. I then added tbsp. of curry powder and covered the pot. Cooked on high for about 2 hours. (if you wanted to leave this over night or on during the day, just change setting to low)

After about 2 hours I took some of the bigger pieces of sweet potato out with some of the broth and blended it to make the soup thicker. Top it with kale and coconut shreds and you have yourself a very yummy meal : )


  • 4 large sweet potatoes
  • Mirepoix mix from Trader Joes or chopped onions, celery, carrots
  • 1-2 cups coconut milk
  • 1-2 cups broth
  • 1 tbsp Curry Powder
  • black pepper to taste
  • Toppings – Kale, coconut shreds, or you can add lentils for more protein and nutritional yeast for a more cheesy flavor!
